Abuelo's Homemade Salsa Contest

Tomato Based

1. Flash Over Salsa, Kyle Butler, Claude

2. 911 Fresh Garden Tomato Salsa, Sheila Junell, Amarillo

3. Samuel’s Super Salsa, Samuel Welch, Amarillo.

Non-Tomato Based

1. Pineapple Margarita Salsa, Sheri Thurman, Amarillo

2. Fruit and Spicy Salsa, Rose Ann Gallegos, Amarillo

3. Kickin’ Cranberry Salsa, Jenny Detten, Panhandle.

Abuelo’s Tomato Based Salsa Contest Recipes

1st Place – Kyle Butler, Claude

“Flash Over Salsa”

1 ½ c. Fresh Diced Tomatoes

5 Jalapeno’s, diced

1 White Onion, diced

Garlic Salt

1 Lime

Cilantro

Mix together diced ingredients; add garlic salt and cilantro to taste.

2nd Place – Sheila Junell, Amarillo

“911 Fresh Garden Tomato Salsa”

5 c. Fresh Tomatoes, diced

½ c. Fresh Purple Onion

½ c. Fresh Green Onion

½ c. Fresh Sweet Yellow Onion

3 Jalapenos, finely chopped

3 Chile Peppers, finely chopped

2 t. Garlic Salt with Parsley

2 Small Avacados, chopped

1  8 oz. Can Tomato Sauce

1 to 2 Drops Red Food Coloring

Mix all the above and serve with chips.

3rd Place – Samuel Welch, Amarillo

“Samuel’s Super Salsa”

1 Pepper

1 Garlic Clove

½ White Onion

1  28 oz. Can Tomatoes

¼ t. Salt

¼ t. Pepper

1/8 t. Oregano

1/8 t. Parsley Flakes

¼ t. Crushed Red Pepper

Put all ingredients in food processor and blend until desired consistency. Pour in bowl and enjoy.

 

Abuelo’s Non-Tomato Based Salsa Contest

1st Place – Sheri Thurman, Amarillo

“Pineapple Margarita Salsa”

2 c. Fresh Pineapple, diced

1/3 c. Sweet Red Onion, chopped

1/3 c. Red Bell Pepper, chopped

2 Jalapeno Pepper, minced

2 T. Cilantro, chopped

1 T. Lime Zest

3 T. Tequila

2 T. Fresh Squeezed Lime Juice

1 T. Honey

½ t. Red Pepper Flakes

Dash of Salt

Combine pineapple, onion, peppers, cilantro and lime zest in a bowl. Mix tequila, lime juice, honey and red pepper flakes and pour over other ingredients. Chill overnight for best flavor.

2nd Place – Rose Ann Gallegos, Amarillo

“Fruit & Spicy Salsa”

1 c. Watermelon, small dice

1 c. Cantaloupe, small dice

1 Kiwi Fruit, small dice

1 c. Pineapple, small dice

1 c. Avacado, small dice

1-2 Jalapenos, small dice

Small Pinch of Seasoned Salt

Juice of One Lime and 1 teaspoon Lime Zest

Cilantro to Taste and Chopped

Mix all ingredients together, chill and serve.

3rd Place – Jenny Detten, Panhandle

“Kickin’ Cranberry Salsa”

1  16 oz. Can Whole Berry Cranberry Sauce

4 Baby Carrots

2 Jalapeno Peppers, 1 seeded

½ Green Bell Pepper, seeded

1/3 Orange, peeled, seeded

3 T. Fresh Cilantro

1/3 t. Salt

1 t. Ground Cumin

Separate whole cranberries from canned sauce. Set berries aside.

Place carrots, jalapeno peppers, bell peppers, cilantro and cranberry sauce in blender. Whirl until desired consistency. Pour into bowl. Add cumin and salt. Refrigerate until ready to serve.

Yield one pint salsa.
